Gotta Love Pumpkin

One of my favorite things about October is getting to teach about pumpkins and go to the pumpkin patch with my class. Now that I teach 4th grade, and not Kindergarten, I don’t really teach about pumpkins all that much. I will still buy a pumpkin for my class, but I will surely miss doing all of the other fun pumpkin activities. Since I don’t get to teach as much about pumpkins this year, I decided I would bake everything pumpkin flavored that I can think of! The pumpkin cupcakes were wonderful, so I have moved on to oatmeal pumpkin cookies, which were equally satisfying. I was a little worried about starting my pumpkin baking madness, because all the blogs were talking about a pumpkin shortage. But, it I am happy to say that there is no shortage of pumpkin at my grocery store! Back to the cookies, they were amazing! I am very picky about my cookies. I only like chewy cookies, and these were just right! They were so soft and chewy, with a little crunch added with the white chocolate chips. I could not stop eating these! And, I have decided that pumpkin makes everything better. It really does! Now I’ve just got to figure out what to make next.
You could change the add-ins to whatever you like, chocolate chips, raisins, dried cherries, pecans, or anything else.
Pumpkin Oatmeal Cookies
Barely adapted from My Baking Addiction
2 cups unbleached all purpose flour
1 ½ cups old-fashioned oats
1 teaspoon baking soda
1 ½ teaspoon ground cinnamon
1 teaspoon pumpkin pie spice
½ teaspoon salt
1 cup (2 sticks) butter; softened
1 cup packed light brown sugar
1 cup granulated sugar
1 cup pumpkin puree
1 large egg
1 teaspoon vanilla extract
1 cup white chocolate chips
1 cup dried cranberries
Preheat oven to 350 degrees F. Line your baking sheet with a silicone mat or parchment paper. Combine flour, oats, baking soda, cinnamon, pumpkin pie spice and salt in medium bowl. Beat butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy. Add pumpkin, egg and vanilla extract; mix well. Add flour mixture; combine until all ingredients are incorporated. Fold in white chocolate chips and dried cranberries. Drop by rounded tablespoons onto prepared baking sheets (save some time by using a small old-fashioned ice cream scoop. Bake for 12-14 minutes or until cookies are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Makes around 48 cookies.
